Like tea, coffee is not water soluble – to make it water soluble (read: instant) coffee is brewed, concentrated, dehydrated, and then dried. This is often a harsh process, impacting taste, flavour and aroma. Now that you know, how do you pick the right coffee?
Everyone talks of ‘premium,’ ‘best quality,’ ‘artisanal’ and more. To start, coffee typically has 2 varieties – Arabica, which is sweeter, smoother, has lower caffeine, and is higher grown / more complex; and Robusta – typically more bitter, has ~2x as much caffeine, more full-bodied and hardier. Now don’t be fooled by tags of ‘100% Arabica’ or ‘Pure Arabica’ – while Gold and Copper are both metals, there is a huge difference! Similarly, you can find poor quality ‘100% arabicas’ and high-quality graded ones (A, AA, etc.) with a huge difference in taste, aroma and body. In addition, coffees can be single origin (i.e. harvested from one region or plantation) or blends i.e. those created by blending beans from different regions / origins. A word on roast profiles: as one goes from a light to a dark roast, brightness (i.e. ‘citrusy’ taste) reduces, mouthfeel and body grow from light to full-bodied, and notes change from more citrus to those of dark chocolate, biscuit. And of course, the closer the
coffee to its roasting date, the more flavorful and aromatic it is.
